With overuse, nutrients in the soil get depleted over time. When farmers fertilize the fields, they use enough nutrients to support the plant’s growth until harvesting time, but there’s usually not much left over, meaning that the plants are not packed with large amounts of vitamins and minerals by the time we eat them.
In addition, we rarely get the opportunity to consume foods immediately after they’re harvested. Depending on the fruit or vegetable, we may not eat it for several days, weeks, or even months. By that time, the food has spent lots of time in trucks, in coolers, and on the grocery store shelves. With every day that goes by, fruits and vegetables have less and less nutrition in them.
The apple you just ate might have contained plenty of vitamins and minerals, but it also might have been several weeks old and depleted of most of its nutrients. That’s why, even if you eat a healthy diet, it’s a good idea to take supplements, too.
